1 Prepare the Cake Batter
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the buttermilk, vegetable oil, eggs, and vanilla. Beat on medium speed for 2 minutes until well combined.
2 The Secret Ingredient
Here's my grandmother's secret: stir in the hot coffee until the batter is smooth. The coffee enhances the chocolate flavor without making it taste like coffee. The batter will be thin - this is normal!
3 Bake to Perfection
Pour the batter evenly into the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then remove to wire racks to cool completely.
4 Make the Frosting
While cakes cool, beat the butter until light and fluffy. Add cocoa powder and mix well. Gradually add powdered sugar alternately with milk, beating to spreading consistency. Stir in vanilla and salt.
5 Assemble the Cake
Place one cake layer on your serving plate. Spread with frosting. Top with second layer. Frost top and sides of cake. For a special touch, sprinkle with chocolate shavings or fresh berries.
